Lemon Rosemary Chicken


[Ingredients]

  • 1/4 cup deseeded thinly sliced green capsicum

  • 1/4 cup deseeded thinly sliced red capsicum

  • 1/4 cup deseeded thinly sliced yellow capsicum

  • 200g cubed chicken thigh

  • 1tbsp lemon juice

  • 1/2tbsp olive oil

  • 1/4tsp rosemary

  • Salt and pepper

[Steps]

  1. Place all capsicums in a baking dish. Arrange chicken breast over vege.

  2. Season chicken with salt and pepper and sprinkle with rosemary. Drizzle lemon juice and olive oil over chicken.

  3. Cover dish with plastic wrap and chill for 1hr. Preheat oven 200 degC.

  4. Bake chicken for 15 to 20mins until it is done, flipping once.
