Zesty Shrimp and Avocado Salad


  • 1lb jumbo cooked shrimp, peeled and deveined, cubed

  • 1 medium tomato, cubed

  • 1 avocado, cubed

  • 1 jalapeno, seeds removed, finely diced

  • 1/4 cup chopped red onion

  • Juice of 2 limes

  • 1tsp olive oil

  • 1tbsp chopped cilantro

  • Salt and pepper


  1. In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5mins to mellow the flavor of the onion.

  2. In a large bowl combine chopped shrimp, avocado, tomato, jalapeno.

  3. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.
