Orange and Arugula Salad


  • 1 small orange - peeled and segment

  • 1tsp balsamic vinegar

  • 1tsp extra virgin olive oil

  • 1/2tsp honey

  • Salt and pepper

  • 2 cups fresh arugula

  • 3tbsp crumbled gorgonzola cheese

  • 2-3 red onion slices


  1. Squeeze juice of 2 orange segments into a bowl and whisk in vinegar, oil, honey, salt and pepper.

  2. Cut remaining segments into bite sizes.

  3. Place greens on a serving plate, topped with orange, onion and cheese. Drizzle vinaigrette over.
