Sweet Coconut Scrambled Eggs


  • 2 large eggs

  • 1tbsp light unsweetened coconut milk

  • 1 cup egg white

  • 1/4tsp honey/maple syrup

  • 1/4 cup unsweetened shredded coconut

  • 1/8tsp fine sea salt

  • Butter/unrefined coconut oil - for coating pan and bread

  • Toasted bread of your choice

  • Fresh fruits of your choice (shown: strawberries, blackberries and banana)

  • Toasted coconut flakes


  1. Whisk eggs, coconut milk, honey/maple, shredded coconut and salt together.

  2. Heat a non-stick pan over medium-low heat. Add egg mixture in and cook slowly, stirring frequently to get creamy scrambled eggs.

  3. Toast bread and spread coconut oil/butter over. Serve with eggs on the top, garnished with coconut flakes and a side of fruits.
