Stuffed Baked Sweet Potato


  • 4 Sweet Potatoes

  • 1/2 Cup Greek Yogurt/Sour Cream

  • 1tsp Taco Seasoning

  • 1tsp Olive/Canola Oil

  • 1 Diced Red Capsicum

  • 1/2 Diced Red Onion

  • 1tsp Chilli Powder

  • 1/2tsp Paprika

  • 1/2tsp Cumin

  • Pinch of Salt

  • 1 1/3 Cup Rinsed and Drained Canned Black Beans

  • 1/2 Cup Salsa

  • 1/2 Cup Mexican Cheese Blend

  • 1/4 Cup Chopped Scallions/Cilantro


  1. Pork potatoes with a fork all over and microwave them on high for 10mins, until soft and cooked thru.

  2. Combine yogurt and taco together.

  3. Heat oil in a pot over medium heat. Add in capsicum, onion, chilli powder, paprika, cumin and salt. Cook until onions have caramelized slightly, abt 5mins. Add in beans, mix well and cook for another 5mins until heat thru.

  4. Use a fork to pierce the top of each potato in an oval shape and remove the skin. Top with 2tbsp cheese, 1/3 cup black bean mixture, 2tbsp yogurt mixture and 2tbsp salsa.
