Coconut Ice Cream


  • 150ml water

  • 115g caster sugar

  • Zest and juice of 2 limes

  • 400ml coconut milk

  • Toasted coconut shavings for decorations


  1. Put water in a saucepan. Add sugar in and bring to boil, stirring constantly until the sugar has dissolved.

  2. Remove from heat and leave to cool then chill.

  3. Put lime zest and lime juice in a saucepan and add in coconut milk.

  4. Pour mixture into a container and freeze for 5 to 6hrs until firm, beating twice using a fork to break up ice crystals.

  5. Scoop into dishes and decorate with coconut shavings.
