Cream of Mushroom Soup


  • 20g butter

  • 30g chopped yellow onions

  • 80g button mushrooms

  • 120g shitake mushrooms

  • 30g flour

  • 1L chicken stock

  • 100ml fresh cream

  • 1tbsp oil

  • Salt and pepper


  1. Melt butter in a pot, add in oil. Sweat onions.

  2. Add in mushrooms and stir until soft, followed by flour, stir well.

  3. Stir in stock. Bring to boil then let simmer for 25mins. Skim if needed.

  4. Using a hand-bender, blend until desire consistency is achieved. Stir in cream, adjust seasoning.

*shitake mushrooms contribute to the colour of the soup. Add in more for a dark grey soup and lesser for a light grey soup.
