Peanut Sandwiched Cookies


  • 35g softened butter

  • 30g peanut butter + extra for spreading

  • 30g brown sugar

  • 30g egg white

  • 40g cake flour

  • 30g bread flour

  • 15g almond powder


  1. Whisk butter and peanut butter in a large mixing bowl until loosen. Whisk in sugar and continue to whisk until mixture turns pale.

  2. Whisk in egg white in 2 additions.

  3. Sift both flours and almond, and fold into mixture.

  4. Transfer mixture into a piping bag fitted with a star tip. Pipe out cookies to the length of a thumb. Bake in a preheated oven of 170degC for 15-20mins.

  5. When done, let cool completely. Spread peanut butter on one cookie and place another cookie over, forming sandwich cookies.
