Scallion Pancake


[Ingredients]

  • 6 finely sliced spring onion

  • 1tsp salt

  • 60ml cooking oil

[Dough]

  • 300g plain/all purpose flour

  • 300ml boiling water

[Steps]

  1. Dough: Sift flour into a bowl and pour water gradually while stirring continuously until well mixed.

  2. Cover bowl with a damp cloth and let stand for 10mins.

  3. Knead mixture to bring together into a dough. Add more flour or water if needed - dough should feel damp not wet.

  4. Cover with a damp cloth and let stand for 20mins.

  5. Knead dough vigorously by pulling and pushing. Finish off by kneading dough for about 15 to 20mins until dough is smooth.

  6. Divide dough into 4 and roll each piece into 0.5cm thickness.

  7. Brush with a little oil and sprinkle spring onion and salt over.

  8. Roll back into a ball and flatten into a round of 12cm in diameter.

  9. Fry each pancake over medium heat until golden brown on both sides.

  10. Drain and serve hot.
