Pickled Watermelon Rind


  • 375ml apple cider vinegar

  • 330g castor sugar

  • 250ml water

  • 1tsp black peppercorn

  • 4 oregano sprigs

  • 2tbsp sea salt

  • 2kg watermelon - only rind (white part) - 1 cm cubes


  1. Place vinegar, sugar, water, peppercorn, oregano and salt in a saucepan, over high heat.

  2. Bring to boil, stirring until the sugar dissolves. Remove from heat and let cool for 30mins.

  3. Add rind cubes into cooled pickling liquid and let pickle for 1hr.
