Smoked Paprika Fried Squid

4 servings


  • 800g squid - cleaned and cut into 4cm pieces

  • 4 cloves of garlic - chopped

  • 2 1/2tbsp smoked paprika

  • Vegetable oil - for deep frying

  • 150g cornstarch

  • 75g self raising flour

  • 310ml cold soda water

  • 1tbsp sea salt flakes + extra to serve

  • 150g whole-egg mayonnaise

  • 1tbsp lemon juice


  1. Place squid, garlic, oregano and half the paprika in a large bowl, mix well and leave to marinade for 10mins.

  2. Half fill a saucepan with oil. Heat over medium fire till 180degC.

  3. Place 1tbsp of paprika, cornstarch, flour, soda water and salt in a bowl. Mix well.

  4. Dip squid in batter and fry for 3mins or till crisp. Remove from oil and drain on kitchen towels.

  5. Place mayonnaise, lemon juice and remaining paprika in a small bowl, mix well.

  6. Serve squid sprinkled with sea salt and dipping sauce.
