Mango Pudding


  • 3 ripe mangoes

  • 400ml (1 can) carnation milk

  • 2.5tbsp gelatin powder

  • 1 cup water

  • 1/2 cup sugar (adjust sugar according to sweetness of mango)


  1. Sprinkle gelatin over water in a heatproof bowl, let bloom.

  2. Puree 2 mangoes and dice 1 mango.

  3. Place gelatin water over a pan of simmering water.

  4. When water turns clear (as gelatin has melted), whisk in sugar until dissolve. Remove bowl from heat.

  5. Whisk in mango puree and milk. Divide mixture among 7-8 serving bowls.

  6. You can either place the diced mango into the pudding or garnish (as shown) when pudding has set.

  7. Chill for at least 2hrs, or overnight.
