Celery Cucumber Gin Cooler


  • 220g caster sugar

  • 250ml water

  • 8 Lebanese cucumber + extra - shaved

  • 8 stalks of celery - cut into smaller pieces

  • 125ml lime juice

  • 125ml gin

  • 1 cup ice

  • 250ml soda water


  1. Place sugar and water in a small saucepan over medium heat and bring to boil. Remove from heat and chill to cold.

  2. Place cucumber and celery in a juicer*.

  3. Place lime juice, gin, sugar syrup, celery-cucumber juice and ice in a blender and blend.

  4. Place ice and shaved cucumber into glasses. Pour blended juice (step 3) into prepared glasses and top with soda water.

*If you don't have a juicer, you can blend the cucumber and celery in a blender and strain juice thru a sieve.
