Homemade Kaya


  • 50g white sugar

  • 5 pandan leaves

  • 50g palm sugar - chopped

  • 5 egg yolks

  • 200ml coconut milk


  1. Balloon whisk yolks till thickened. Set aside.

  2. In a non-stick frying pan, add in coconut milk, pandan leaves and both sugars. Cook and stir using a rubber spatula for 10mins till both sugars dissolved.

  3. Add some coconut-sugar mixture into yolks and mix well.

  4. Set pan over a pan of simmering water. Gradually mix in yolks, then remove pandan leaves.

  5. Continue to cook and stir till mixture reaches the right consistency.
