Salted Yolk Prawns


  • 20 large prawns - peeled, deveined

  • 1 egg - beaten

  • 1 cup rice flour

  • 2-3 chilli padi

  • 20 curry leaves

  • Oil for deep-frying

  • 1tbsp oil

  • 20g butter


  • 1/2tsp sugar

  • 1/2tsp salt

  • 1/4tsp pepper

[Salted Yolk Sauce]

  • 8 salted egg yolks

  • 4tbsp oil

  • 1tsp chopped garlic

  • 1tsp chopped ginger


  1. In a mixing bowl, add in prawns and marinade ingredients. Let marinate for 10mins.

  2. Steam yolks for 10mins. Mash as fine as possible.

  3. In a non-stick pan with 4tbsp oil, add in yolks and fry till foamy. Add in garlic and mix well. Transfer to a bowl and set aside.

  4. Coat prawns with egg, then flour. Set aside.

  5. Deep-fry prawns at 160degC until golden brown. Drain and set aside.

  6. Add 1tbsp of oil, chilli padi, curry leaves and butter, toss well. Followed by mashed yolks. Mix well.

  7. Add in prawns and toss well.
