Trio Egg Spinach


  • 250g Chinese spinach - sliced into serving pieces, leaves and stems separated

  • 2 cups chicken stock - unsalted

  • 2 cloves garlic - thinly sliced

  • 2tbsp goji berries

  • 1 century egg - peeled, quartered

  • 1 salted egg - peeled, quartered

  • 1 egg - beaten

  • 1tsp salt

  • 1tsp sugar

  • 1/2tsp sesame oil

  • 1/2tsp hua diao jiu


  1. Add stock to a deep pan, bring to boil.

  2. Add in goji berries and garlic, let boil 1min.

  3. Add in stem parts, salt and sugar. Cover and let boil for 2mins.

  4. Add in century egg and salted egg pieces. Cover and let boil for 1min.

  5. Add in leaf parts. Cover and let boil for 2mins.

  6. Add in egg, stir well, and transfer to serving dish.

  7. Drizzle sesame oil and hua diao jiu over.
