Braised Sea Cucumber with Duck


  • 1kg sea cucumber - sliced

  • 1/2 braised duck - sliced into serving pieces

  • 3 duck gizzards - sliced

  • 200g roasted pork belly - sliced into serving pieces

  • 6 Chinese mushrooms - soaked in hot water

  • 2tbsp oil

  • 1tbsp minced garlic

  • 1tbsp minced ginger

  • 4tbsp dark soy sauce

  • 2tbsp light soy sauce

  • 2tbsp oyster sauce

  • 1L chicken stock

  • 60g rock sugar

  • 2tbsp hua diao jiu

  • Fresh coriander - to garnish


  1. Heat 2tbsp of oil in a wok. Add in ginger and garlic, stir-fry till fragrant.

  2. Add in pork belly, mushrooms and sea cucumber. Stir well and stir-fry till fragrant.

  3. Add in dark soy sauce, light soy sauce and oyster sauce. Mix well, then transfer to pressure cooker.

  4. Add in braised duck, duck gizzards, stock, rock sugar and hua diao jiu. Pressure cook for 25mins.

  5. Mix well and serve garnished with coriander.
