Yam Paste 芋泥


[Ingredients] 材料

  • 600g yam - cubed 芋头600克 - 切块

  • 100g pork lard 猪油100克

  • 100g sugar 糖100克

  • 100g pumpkin - cubed 南瓜100克 - 切块

  • 100ml water 水100毫升

  • 50g ginkgo nuts 白果50克

  • About 50ml coconut milk 椰浆大概50毫升

[Steps] 步骤

  1. Steam pumpkin for 15mins or until soft. 南瓜蒸煮15分钟或至软化。

  2. Mash with a fork and set aside. 用叉子压碎后,放一旁。

  3. Steam ginkgo nuts for 10mins. 白果蒸煮10分钟。

  4. Steam yam for 25mins or until soft. 芋头蒸煮25分钟或至软化。

  5. Place yam into a food processor while it's hot, add in 50ml water and blend till smooth, set aside. 芋头趁热放入搅拌器,加入水50毫升,搅拌至泥状,放一旁。

  6. Melt pork lard in a saucepan. Add in yam puree and mix well. 把猪油放入平底锅,融化后,加入芋泥,搅拌均匀。

  7. Add in 50ml water and sugar, mix well. 加入水50毫升和糖,搅拌均匀。

  8. Portion yam paste into serving bowls. Top with a spoon of pumpkin mash, some ginkgo nuts and coconut milk. 把芋泥平均分出,加上南瓜泥,白果和椰浆。
