Radish Cake 萝卜糕


[Ingredients] 材料

  • 1kg white radish - peeled, shredded 白萝卜1公斤 - 削皮,切丝

  • 50g dried shrimp - soaked, drain, chopped 虾米50克 - 泡水,切碎

  • 1 Chinese wax sausage - diced 腊肠1条 - 切丁

  • 2tbsp oil 油2汤匙

  • 200g rice flour 粘米粉200克

  • 50g wheat starch 小麦薯粉50克

  • 200ml chicken stock/water 鸡汤或水200毫升

  • 1tsp salt 盐1茶匙

  • 1/2tsp pepper 胡椒粉1/2茶匙

  • 50g fried peanuts 炸花生50克

  • 30g fried shallots 炸葱30克

  • 30g spring onion - chopped 青葱30克 - 切碎

  • 15g red chilli - chopped 红辣椒15克 - 切碎

[Steps] 步骤

  1. Blanch radish in hot water for 5mins. Drain radish and set aside. 白萝卜过水5分钟,放一旁。

  2. Heat oil in pan. Stir-fry sausage and shrimps, set aside. 锅里热油,腊肠,虾米炒熟,放一旁。

  3. Add radish to pan with stock or water. Add in salt and pepper, mix well. 锅里加入萝卜,鸡汤或水,盐和胡椒粉,搅拌均匀。

  4. Sift starch and flour. Gradually whisk into the radish mixture. 小麦薯粉和粘米粉过筛,慢慢搅进萝卜和配料。

  5. Mix in sausage and shrimp. 加入香肠和虾米,搅拌均匀。

  6. Lightly oil a baking dish and add in radish mixture. Steam for 45mins - 1hr. 烤盘涂上一层薄薄的油,萝卜湖倒入烤盘,蒸煮45分钟至1小时。

  7. Served topped with shallots, peanuts, spring onion and chilli. 在烤熟的萝卜糕上沙上炸葱,花生,青葱和辣椒。
