Taiwanese Three Cup Chicken 台湾三杯鸡


[Ingredients] 材料

  • 2 large chicken thigh with drumstick - into serving pieces 大鸡腿2片 - 切块

  • 4 cloves garlic - halved lengthways 蒜4粒 - 切半

  • 20g sliced ginger 姜片20克

  • 30g fresh basil 新鲜九层塔30克

  • 3tbsp sesame oil 麻油3汤匙

  • 1/2tsp dark soy sauce 酱油1/2茶匙

[Sauce] 酱

  • 2tbsp light soy sauce 酱青2汤匙

  • 3tbsp hua diao jiu 花雕酒3汤匙

  • 1tbsp rock sugar 冰糖1汤匙

[Steps] 步骤

  1. Mix sauce ingredients together until sugar dissolves. Set aside. 把《酱》的材料搅拌均匀至糖融化,放一旁。

  2. Heat oil in a pan, add in garlic and ginger, and stir-fry till fragrant. 锅里热油,加入蒜和姜,炒香。

  3. Add in chicken and cook till it is 70% cooked. 加入鸡块,煮至7分熟。

  4. Add in sauce mixture, followed by dark soy sauce. Cook covered for 3mins. 加入《酱》,接着酱油,搅拌均匀,盖着焖煮3分钟。

  5. Add in basil and sesame oil, mix well and serve. 加入九层塔和麻油,搅拌均匀,便能起锅。
