Caprese Pasta Salad


  • 250g San Remo vegeroni shapes

  • 1tsp Italian seasoning

  • 200g cherry tomatoes, halved

  • 200g small mozzarella balls

  • 20g basil leaves


  • 6tbsp extra virgin olive oil

  • 3tbsp balsamic reduction

  • 1 clove garlic

  • Salt and pepper


  1. Boil pasta with 1tbsp of salt for 8mins. Drain and set aside.

  2. In a food process, add in dressing ingredients and process till well mixed.

  3. In a bowl, add in pasta, prepared dressing and Italian seasoning, mix well.

  4. Followed by tomatoes, mozzarella and basil, mix well.
