Vanilla Candy Cubes


  • 100g whipping cream

  • 1/4 vanilla bean

  • 100g sugar

  • 30g sugar syrup

  • 20g butter


  1. Place sugar, syrup and butter in a saucepan. Cook over low fire until butter melted.

  2. Scrape seeds from vanilla pod into another saucepan. Add in cream and cook till slightly boiled.

  3. When butter sugar has caramelized (turn brown), mix in vanilla-infused cream.

  4. Cook over low fire and heat till temp reaches 115-117degC.

  5. Scoop a small amount aside and mix till it cools. When it solidifies when cooled, it’s ready.

  6. Pour mixture into a parchment paper lined baking tray and let cool completely. Chill until it solidifies.

  7. Remove candy from fridge and cut into squares.
