Chocolate Mousse Cake


[Base]

  • 2 eggs

  • 60g sugar

  • 30g cake flour

  • 15g almond powder

  • 15g cocoa powder

  • 25g melted butter

[Chocolate Mousse]

  • 2 egg yolk

  • 35ml sugar syrup

  • 125g dark chocolate

  • 50g dried almond

  • 250ml whipping cream

[Decoration]

  • 200g dark chocolate

  • Cocoa powder

[Steps]

  1. Base: Whisk egg in a heatproof bowl. Whisk in sugar and place bowl over a pan of simmering water. Whisk till egg becomes warm.

  2. Remove bowl from heat and continue whisking until mixture is pale and creamy.

  3. Sift cocoa powder, flour and almond twice, and fold into mixture.

  4. Pour one scoop of batter into butter, mix well, and pour back into batter, mix well.

  5. Grease a round cake pan and line with parchment paper. Pour batter in and bake in a preheated oven of 180degC for 20-25mins. Let cool.

  6. Decor: Melt chocolate. Secure a sheet of parchment paper to the back of a large baking tray using some chocolate as adhesive. Spread chocolate out into a thin layer. Let dry until solidify. Break into pieces.

  7. Cut cooled cake horizontally into 3 pieces.

  8. Mousse: Place chocolate in a heatproof bowl and place over a pan of simmering water to melt. Stir in almond.

  9. In another bowl, whisk egg yolk till foamy. Add in sugar and place bowl over simmering water. Whisk until foamy.

  10. Remove bowl from heat and continue to whisk until pale and creamy.

  11. In a third bowl, whisk cream until ready. Fold into chocolate mixture, followed by egg mixture.

  12. Place cake into cake pan and pour mousse in. Smooth the top. Chill till set.

  13. Remove cake from pan. Decorate with chocolate pieces and dust cocoa powder over.
