Fruit Cake


  • 175g softened butter

  • 175g caster sugar

  • 3 large eggs

  • 225g plain flour

  • Pinch of salt

  • 1/2tsp baking powder

  • 140g golden raisins

  • 55g finely chopped candied peel

  • Rind of 1/2 lemon - finely grated.


  1. Preheat oven 180degC.

  2. Lightly butter a 7.5 cup loaf tin and lined it with parchment paper.

  3. Sift flour, salt and baking powder together.

  4. Cream butter and sugar in a bowl until light and creamy.

  5. Beat in eggs, one at a time.

  6. Fold in flour mixture.

  7. Add in raisins, candied peel and lemon rind. Mix well.

  8. Spoon mixture into tin and smooth the surface with the back of the spoon. Bake for 1hr 20mins.

  9. Check the cake after 1hr. If the top is browning too quickly, cover it with a piece of parchment paper.

  10. Let it cool slightly before turning it out onto the wire rack.

  11. Allow to cool completely and cut into serving slices.
