Matcha Chiffon Cake


[Ingredients]

  • 3 egg yolk

  • Pinch of salt

  • 30g sugar

  • 45ml oil

  • 50ml milk

  • 8g matcha powder

  • 60g cake flour

  • 4 egg white

  • 30g baking powder

[Steps]

  1. Microwave milk until heated.

  2. Place egg yolk in a large mixing bowl, add in salt and sugar, whisk till pale and creamy.

  3. Add in oil, mix well, followed by milk in 2 additions, mixing well after each addition.

  4. Sift matcha and flour twice and add into mixture. Whisk well.

  5. Place egg white in another mixing bowl and whisk till foamy. Add in sugar in 2 additions, mixing well after each addition until stiff peaks formed (meringue).

  6. Add meringue into matcha mixture in 3 additions, mixing well after each addition.

  7. Pour mixture into chiffon cake pan. Using a chopstick, swirl 2-3 times to allow air bubbles to escape. Bake in a preheated oven of 170degC for 25-30mins.

  8. Keep cake in pan and let cool upside down on a wire rack. Remove cake from pan when cooled.
