Vanilla Pound Cake


  • 315g sifted plain flour

  • 1 1/2tsp baking powder

  • 1/2tsp baking soda

  • Pinch of salt

  • 1 vanilla bean

  • 225ml buttermilk

  • 175g softened butter

  • 225g caster sugar

  • Zest of 1 lemon

  • 3 large egg yolks

  • Icing sugar


  1. Preheat oven 180degC.

  2. Lightly butter a 9 inch round tin, dept 4cm. Line the base with parchment paper.

  3. Sift flour, baking powder, baking soda and salt together in a large bowl.

  4. Split the vanilla pod and scrape the seeds out into a separate bowl. Add buttermilk and whisk together. Set aside.

  5. Beat butter. Add sugar and cream together with lemon zest.

  6. Add eggs in gradually and beat between each addition until the mixture looks light and creamy.

  7. Fold in flour mixture alternately with buttermilk until lightly combined, finishing with flour mixture.

  8. Spoon mixture into the tin and bake for 50mins until golden brown, or until an inserted skewer comes out clean.

  9. Allow it to cool and dust the top with icing sugar.
