Gingerbread Cake with Caramel Popcorn


[Ingredients]

  • 2 1/4 Cup Flour

  • 1tbsp Cocoa Powder

  • 2tsp Ground Cinnamon

  • 1tsp Ground Ginger

  • 1/2tsp Ground Cardamom

  • 1/4tsp Ground Cloves

  • 1 3/4tsp Baking Soda

  • 1/2tsp Salt

  • 3/4 Cup Oil

  • 2tbsp Melted Butter

  • 3/4 Cup Brown Sugar

  • 1/2 Cup Honey

  • 1/4 Cup Mild Molasses

  • 2 Eggs

  • Zest of 1 Lemon

  • 3/4 Cup Boiling Caramel Water*

*Cook 3tbsp granulated sugar in a small saucepan, stirring until sugar melts and turns amber colour. Add in 1 cup of water (melted sugar will seize) and stir until incorporated. [Cream]

  • 2 1/2tsp Gelatin Powder

  • 2tbsp Cold Water

  • 1 Packet Room Temp Cream Cheese

  • 3/4 Cup Heavy Cream

  • 1/2 Cup Sour Cream

  • 1tsp Vanilla Essence

  • 1tbsp Finely Chopped Ginger

  • 1/2 - 3/4 Cup Icing Sugar

[Steps]

  1. Cake: Preheat oven 175degC. Grease the bottom and 2 larger sides of 2 loaf pans and line with parchment paper, or a 9inch square pan.

  2. Sift flour, cocoa, spices, baking soda and salt together.

  3. In another bowl, whisk oil, butter, sugar, honey, molasses, eggs and lemon zest together until smooth.

  4. Add wet ingredients to dry ingredients and whisk until combined.

  5. Add in caramel water and whisk until incorporated. Pour batter into prepared pans. Bake for 60mins or when an inserted toothpick comes out clean.

  6. When done, let cake cool in pan on wire rack, abt 1hr.

  7. Cream: In a small microwavable dish, add in water and sprinkle gelatin over. Stir gently to moisten gelatin. Let bloom for 5mins.

  8. In another bowl, combine heavy cream and sour cream together until smooth, set aside.

  9. Whisk cheese, then add in sugar and whisk until smooth. Add in gelatin and cont whisking. Add in cream mixture and whisk until thick and smooth. Fold in ginger.

  10. Once cake has cooled, unmold cakes from pans and slice into layers. Spread cream onto cakes and layer as shown. Chill it for 3hrs or overnight to set cake.

  11. Once set, slice it into serving pieces and served cake topped with popcorn.
