Strawberry Pocky Cake

  • Your favourite cake recipe or cake mix - I recommend Betty Crocker's

  • 250g butter - softened

  • 375g icing sugar

  • 100g strawberry Nesquik powder

  • About 1/4-1/3 cup milk

  • 5-6 packets of strawberry pocky

  • 1-2 boxes of fresh strawberries

  • Milk chocolate - for dipping

  • White chocolate - for dipping

  • Dark chocolate - for dipping

  1. Bake cake as instructed.

  2. Icing: Place butter in a large mixing bowl and beat on high speed till smooth and fluffy.

  3. Add in icing sugar, nesquik, and mix till incorporated.

  4. Gradually add in milk, 1tbsp at a time, and beat on high till light and fluffy. Icing should be stiff enough to hold its shape but smooth enough to spread.

  5. Slice cake into 2 or 3 layers. Sandwich icing between cakes.

  6. Crumb coat cake and chill for 30mins, then cover the cake with remaining icing and smooth all sides.

  7. Place pocky sticks around the cake. Gently press the pocky onto the icing so that it stays in place. Chill cake to set icing.

  8. Prepare chocolate-dipped strawberries.

  9. Chill cake until ready to serve. Remove cake from fridge 15mins before serving and place strawberries on top.
