Cotton Cheesecake


  • 125g cream cheese

  • 30g butter

  • 2tbsp + 1tsp sugar

  • 50g milk

  • 3 egg yolks

  • 1/2tsp vanilla essence

  • 2tsp lemon juice

  • 1/8tsp salt

  • 2tbsp cake flour

  • 2tsp corn starch

  • Meringue > 3 egg whites, 2tbsp + 1tsp sugar

  • Icing sugar


  1. Preheat oven 140degC.

  2. In a heatproof bowl set over a pan of simmering water, add in cheese, butter and sugar. Whisk till well combine, remove from heat.

  3. Whisk in milk.

  4. Followed by yolks, one at a time.

  5. Add in vanilla, lemon and salt, mix well.

  6. Sift in flour and starch, mix well.

  7. In another bowl, whisk whites till frothy. Then gradually whisk in sugar and continue to whisk till soft peaks formed.

  8. Whisk meringue into cheese mixture in several batches.

  9. Grease and line a 6inch round cake pan with parchment paper. Pour in cake batter.

  10. Place cake pan in a larger pan filled with hot water. Bake for 80mins.

  11. Remove cake from pan and allow to cool completely. Sprinkle icing sugar over.
