Chocolate Custard Tart


  • 7g egg yolk

  • 3/4tbsp milk

  • 70g cake flour

  • 1/2tbsp cocoa powder

  • 2tsp sugar

  • 1/8tsp salt

  • 55g unsalted butter, diced


  • 75g dark chocolate, chopped

  • 60g egg yolk

  • 60g sugar

  • 2tsp cake flour

  • 3/4tbsp corn starch

  • 250ml milk, warmed

  • 75ml whipping cream, warmed

  • Dark chocolate shavings


  1. Tart: In a mixing bowl, add in egg yolk and milk, mix well.

  2. In another mixing bowl, add in flour, cocoa powder, sugar and salt, mix well.

  3. Add in butter and knead mixture till it resembles crumbs.

  4. Add in egg-milk mixture and knead into a dough.

  5. Place dough between 2 sheets of parchment paper and roll it out to a thickness of about 0.5cm. Chill for 30mins.

  6. Place dough in a 6inch cake ring and press it down to the bottom and against the sides. Trim off excess dough.

  7. Filling: Preheat oven 170degC.

  8. In a mixing bowl, add in egg yolk and sugar. Mix well.

  9. Add in flour and starch, mix well.

  10. Followed by milk and cream, mix well.

  11. Pour mixture into a saucepan and over low fire, keep stirring till mixture thickens. Remove from heat.

  12. Add in chopped chocolate and mix well.

  13. Pour custard into prepared tart and level the surface. Bake for 35mins.

  14. Remove tart from ring and decorate with chocolate shavings.
