Creme Brulee


  • 4 egg yolks

  • 50g sugar + extra for sprinkling

  • 300g whipping cream

  • 100ml milk

  • Pinch of salt

  • 1tsp vanilla essence


  1. Preheat oven 160degC.

  2. In a mixing bowl, add in egg yolks and sugar, mix well.

  3. Place remaining ingredients in a saucepan and mix well. Place over low fire and bring to a boil.

  4. Remove from heat and gradually mix into eggs mixture.

  5. Strain mixture and divide amongst 4 ramekins.

  6. Place ramekins in a baking dish and fill dish with hot water. Bake for 35mins.

  7. When done, allow them to cool. Upon serving, sprinkle the top with a layer of sugar and blowtorch till sugar melts and caramelises.
