Oreo Matcha Pocky Cake


[Oreo Cake]

  • 3 egg whites + 30g sugar

  • 135g unsalted butter

  • 75g sugar

  • 3 egg yolks

  • 135g cake flour

  • 1/2tbsp baking powder

  • 5 oreos, diced

[Matcha Cake]

  • 4 egg whites

  • 80g sugar

  • 4 egg yolks

  • 1/2tsp vanilla essence

  • 100g cake flour

  • 1/2tbsp matcha powder

  • 1/2tsp baking powder

  • 40g unsalted butter, melted

  • 45ml milk

[Oreo Cream]

  • 350g whipping cream

  • 30g sugar

  • 30g oreo, without filling, crushed

[Others]

  • Sugar syrup

  • Matcha pocky

  • Mini oreos

[Steps]

  1. Oreo Cake: Preheat oven 180degC.

  2. Whisk egg whites till frothy.

  3. Gradually add in sugar and whisk till stiff peaks.

  4. In another mixing bowl, whisk butter to loosen.

  5. Add in sugar and mix well.

  6. Add in egg yolks and mix well.

  7. Sift in flour and baking powder, mix well.

  8. Gradually mix in meringue.

  9. Add in oreos and mix well.

  10. Grease and line a 7inch cake ring with parchment paper and pour batter in. Bake for 35mins.

  11. When done, remove cake from pan and allow to cool. Then slice away the top.

  12. Matcha Cake: Preheat oven 170degC.

  13. Whisk egg whites till frothy.

  14. Gradually add in sugar and whisk till stiff peaks.

  15. Mix in egg yolks, one at a time.

  16. Add in vanilla and mix well.

  17. Sift in flour and baking powder, mix well.

  18. Add matcha powder and milk into melted butter and mix well.

  19. Scoop some batter into the butter mixture and mix well. Then pour it back into the batter and mix well.

  20. Grease and line a 7inch cake ring with parchment paper and pour batter in. Bake for 35mins.

  21. When done, remove cake from pan and allow to cool. Then slice away the top and slice cake horizontally into 2 sheets.

  22. Cream: Whisk cream till thickened. Add in sugar and whisk till stiff peaks.

  23. Add in oreo and mix well.

  24. Assemble: Get a sheet of matcha cake. Drizzle syrup over and spread a layer of cream.

  25. Place oreo cake over and repeat steps.

  26. Then place the other sheet of matcha cake over and drizzle with syrup. Cover the entire cake in cream.

  27. Place matcha pocky around the sides of the cake, with the biscuit part facing down.

  28. Transfer remaining cream into a piping bag fitted with a star tip. Pipe around the edge of the cake and decorate with mini oreos.
