Chocolate Crepe Cake


  • 4 eggs

  • 50g sugar

  • Pinch of salt

  • 185g cake flour

  • 1tbsp cocoa powder

  • 500ml milk

  • 70g unsalted butter, melted


  • 400ml whipping cream

  • 20g sugar

  • 50g dark chocolate, melted

  1. In a mixing bowl, add in eggs, whisk slightly.

  2. Add in sugar and salt, mix well.

  3. Sift in flour and cocoa powder, then add in milk, mix well.

  4. Lastly, add in butter and mix well. Strain batter.

  5. Heat a 21cm non-stick frying pan over low-medium heat.

  6. Lightly oil pan and ladle a scoop of batter into pan and quickly swirl the pan so it covers the entire bottom. Cook till both sides are browned. Repeat till batter is used up.

  7. Using a 6inch cake ring, cut through the crepes.

  8. Filling: Whisk cream till thickened. Add in sugar and whisk till soft peaks.

  9. Add in chocolate and continue to whisk till stiff peaks.

  10. Get a sheet of crepe, spread a thin layer of cream. Add 2nd sheet of crepe, then cream again, and repeat steps.

  11. On the last sheet of crepe, top with cream and level the top. Decorate with meringue kisses (recipe here).
