Drunken Chicken 醉鸡


  • 2 boneless chicken thigh

  • 500ml chicken stock

  • 1 cup Hua Diao Jiu

  • 1/4 cup fish sauce

  • 2tbsp sugar

  • 1tsp salt

  • 2tbsp Goji berries

  • 10g dang shen

  • 10g ginger, sliced

  • 3 cloves garlic, peeled

  • Chinese cucumber slices - garnish


  1. Sprinkle salt on skin side of chicken and roll it up and wrap in foil.

  2. Steam for 15mins.

  3. In a pot, add in stock, ginger, garlic, dang shen, Goji berries and sugar. Mix well and bring to a boil.

  4. Remove from heat and add in fish sauce and Hua Diao Jiu. Mix well.

  5. When chicken is done, soak them in ice bath for 10mins.

  6. Place chicken in a container (deep enough to keep chicken soaked in the marinade) and pour marinade over. Chill covered overnight.

  7. Slice chicken into serving pieces. Plate them with chicken and pour marinade over.
