Ayam Pong Teh (Peranakan Braised Chicken with Potatoes)


  • 2 whole chicken legs / 4 wings + 2 drumsticks - rinsed

  • 8 shallots - peeled

  • 5 garlic cloves - peeled

  • 5tbsp cooking oil

  • 3 potatoes - peeled, cut into chunks

  • 2tbsp fermented bean paste

  • 250ml water

  • 2tbsp dark soy sauce

  • 2tbsp gula melaka / brown sugar

  • 1tsp light soy sauce


  1. Blend shallots and garlic with 3tbsp of oil till smooth.

  2. Pan-fry potatoes till browned, don’t need to cook through, set aside.

  3. In a cooking pot, add 2tbsp of oil and shallot-garlic blend. Stir-fry over medium-low heat till fragrant.

  4. Add in bean paste, dark and light soy sauce and gula melaka / sugar. Mix well.

  5. Followed by chicken and potatoes, mix well.

  6. Add in water and bring to a simmer. Let cook till liquid reduces to a gravy, about 20-25mins.
