Black Vinegar Trotter

Serving: 4-6pax


  • 1pc pork trotter (about 1.2kg) - cut into pcs

  • 150g old ginger - peeled and sliced

  • 200g young ginger - peeled and sliced

  • 1btl (750ml) black sweet rice vinegar (糯米甜黑醋)

  • 300ml Chinkiang vinegar (镇江香醋)

  • 3 tbsp sesame oil

  • 3 stalks scallions

  • 200g palm sugar

  • 6 hardboiled eggs


  1. Blanch trotters with scallions and a few pieces of ginger. Then, drain and rinse the trotters clean, set aside.

  2. Boil another pot of water and blanch trotters the 2nd time, drain and run it over tap water.

  3. In a wok, drizzle in some sesame oil. Add in both the ginger and stir-fry till fragrant.

  4. Add in trotters and stir-fry till it is slightly brown and fragrant.

  5. Transfer trotters and ginger into a deep pot. Add in both the vinegar and let simmer covered for 1hr.

  6. Add in sugar and mix well, followed by eggs and let cook for another 10mins.
