Ham and Mushroom Carbonara


  • 1 yellow onion - peeled and chopped

  • 3 garlic cloves - peeled and chopped

  • 100ml stock / water (🔍bone and collagen stock)

  • 100ml cooking cream

  • 80g grated aged cheddar

  • 50g grated parmesan

  • 200g honey baked ham - cut into small cubes

  • 6-8 brown button mushrooms - sliced

  • Fresh chopped parsley - garnish


  1. Saute onions and garlic till soft. Add in ham and mushrooms, saute till lightly browned. Season with salt and pepper.

  2. Add in cream, stock, cheddar and parmesan. Stir well and let simmer for 2-3mins. Adjust seasoning.

  3. Toss in your choice of pasta and sprinkle fresh parsley over.
