Pickled Cucumber


  • 3 Japanese cucumber

  • 1/2tsp sugar

  • 1/2tsp salt


  • 1 garlic clove - peeled, chopped

  • 1tbsp vinegar (apple cider / white / black)

  • 1tsp sugar

  • 1/2tsp salt

  • 1/2tsp light soy sauce

  • 2tbsp chilli oil


  1. Quarter cucumbers and smash them slightly with a rolling pin or the back of a knife.

  2. Remove the seeds and cut into bite sizes.

  3. Add salt and sugar, mix well and set aside for 30mins. Drain off the liquid that it releases.

  4. Combine seasoning ingredients together and microwave for 15secs. Add to the cucumber and mix well.
