Salmon in Lemon Onion Cream


  • 2 salmon fillets

  • 1 medium yellow onion - peeled and sliced

  • 4 garlic cloves - peeled and chopped

  • 1 bunch asparagus - peeled and trimmed

  • 6-8 cherry tomatoes

  • 100ml cooking cream

  • 100ml stock

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • Salt, pepper and sugar

  • Olive oil

  • 4 garlic cloves - peeled and thinly sliced


  1. Pan-fry sliced garlic till golden brown. Set aside.

  2. Season salmon with salt, pepper and olive oil. Pan-sear till golden brown and just cooked. Set aside.

  3. Remove most of the oil, leaving just 1tbsp. Add in onions and saute till soft.

  4. Season asparagus with salt and pepper, and place over the onions. Cook covered for 5mins till al dente, then remove from pan and set them aside.

  5. Back to the pan, add in garlic and lemon zest, saute till fragrant.

  6. Add in cream and stock, adjust seasoning and allow to simmer for 1-2mins.

  7. Add in salmon and let simmer for a few mins.

  8. Lastly, turn off fire and add in asparagus and cherry tomatoes. Sprinkle garlic chips over.
