Salt and Pepper Prawns

Serving: 3-4pax


  • 500g medium prawns

  • 1.5 tbsp rice flour

  • 1 tbsp chopped garlic

  • 1 tbsp chopped ginger

  • 25g chopped red capsicum

  • 1 tbsp chopped scallions (white parts)

  • 1 tbsp chopped shallots

  • 1 tsp salt

  • 1/2 tsp white pepper

  • 1/2 tsp black pepper

  • 1 tsp sugar

  • Chopped scallions (green parts) - garnish


  1. Trim prawns, rinse and pat dry. Dust them with rice flour.

  2. Deep-fry prawns till 50% cooked and drain. Then, bring the heat up and fry prawns for a second time. Drain and set aside. Reserve cooking oil.

  3. In the same pan with some reserved oil over low heat, stir-fry garlic, ginger, capsicum, scallions and shallots till fragrant.

  4. Add in prawns and mix well. Followed by salt, pepper and sugar.

  5. Serve garnished with chopped scallions.
