Soy Herbal Chicken


[Ingredients]

  • 1 whole chicken leg

  • 1 cinnamon stick

  • 1 star anise

  • 3 ginger slices

  • 3 shallots - peeled, sliced

  • 3 garlic cloves - peeled, smashed

  • 3 shiitake mushrooms - soaked, sliced

  • 200ml water

  • 3 danggui slices

  • 4-5 dried longans

  • 1tsp sugar

  • 1/2tsp salt

[Marinade]

  • 1tsp light soy sauce

  • 1/2tsp dark soy sauce

  • 1tsp sesame oil

  • 1tsp pepper

[Steps]

  1. Marinate chicken with marinade ingredients. Let sit for 5mins.

  2. In a cooking pot, add 1tsp oil over medium-low heat.

  3. Add in cinnamon, star anise, ginger, shallot and garlic. Saute till fragrant.

  4. Add in chicken and pan-sear it till it gets some colour.

  5. Add in water, mushrooms, danggui and dried longans. Bring to a simmer and cook covered for 30mins, making sure the liquid doesn’t dry up.

  6. Adjust seasoning and remove from heat.
