Spicy Eggplant with Minced Meat


- 150g minced meat - marinated with 1tsp light soy sauce, 1/2tsp pepper, 1/2tsp sesame oil, 1tsp cornstarch

- 3 eggplants, sliced

- 3 cloves of garlic, peeled and chopped

- 1 red chilli, seeded and chopped

- 150ml water

- Chopped scallion and fried shallot

- 1tsp spicy bean paste

- 1tsp hoisin sauce

- 1tsp sugar


1. In a pan over medium-low heat, add in 1tbsp cooking oil, followed by garlic. Stir-fry till fragrant.

2. Add in minced meat and stir-fry, followed by spicy bean paste, hoisin sauce and sugar.

3. Add in chilli and half the water, cook for a few mins.

4. Add in eggplant and the rest of the water. Mix well and let simmer covered. Cook till eggplant is cooked through and soft.

5. Serve garnished with scallion and fried shallot.
