Sweet and Sour Pork


[Ingredients]

  • 400-450g pork collar - cubed, rubbed with 1/2tsp baking soda, rinse off after 20mins

  • 1 red onion - peeled, sliced

  • 4 garlic cloves - peeled, chopped

  • 1 Japanese cucumber - cut into chunks

  • 1/3 pineapple - cut into chunks

[Seasoning]

  • 1/2tsp pepper

  • 1/2tsp salt

  • 1tbsp Chinese wine


[Batter]

  • 1 egg

  • 100g cornstarch

  • 1/2tsp baking soda


[Sauce]

  • 3tbsp tomato ketchup

  • 100ml stock

  • 1 1/2tsp sugar

  • 1tsp cornstarch

  • 50ml water

  • 1tsp chicken powder

  • 1tbsp apple cider vinegar


[Steps]

  1. Marinate pork with seasoning ingredients, set aside for 30mins.

  2. Mix batter ingredients together and coat pork slices. Pan-fry them till golden brown, let drain on paper towels.

  3. Combine sauce ingredients together and set aside.

  4. Saute onions and garlic till fragrant. Add in sauce and bring to a simmer.

  5. Add in pork, pineapple and cucumber, mix well.
