Thai-style Fried Chicken


  • 1 whole chicken - remove head, feet, back bone and body bone, cut into smaller pieces

  • - lightly season with salt


  • 1 red chilli

  • 4 garlic cloves - peeled

  • 1/4tsp turmeric powder

  • 2tbsp prawn / shallot oil

  • 2tsp gula melaka / sugar

  • 3 lemongrass - remove outer layers

  • 1tbsp black peppercorns

  • 3 coriander root


  1. Blend marinade ingredients till smooth then rub onto chicken, let marinate 30-45mins.

  2. Pan-fry in batches till browned over medium-low heat. Let drain on paper towels.
