Rice Cooker Yam Rice



Serving: 5-6pax


[Ingredients]

  • 220g yam - peeled and cut into cubes

  • 2 cups rice grains

  • 60g dried shrimps - soaked till soft, roughly chopped

  • 8pcs Chinese mushrooms - soaked till soft, diced and reserve 250ml soaking water

  • 80g wax sausage - soaked till soft, diced

  • 450g pork belly - slice into 1cm strips

  • 10 shallots - peeled and thinly sliced

  • 6 cloves garlic - chopped

  • 100ml water

  • 2 tbsp cooking oil


[Seasoning]

  • 1.5 tbsp oyster sauce

  • 2 tbsp light soy sauce

  • 1.5 tbsp dark soy sauce

  • 1 tbsp sesame oil

  • 2 tbsp shaoxing wine (绍兴酒)

  • 0.5 tsp sugar

  • 0.5 tsp pepper


[Steps]

  1. Wash and drain rice, set aside.

  2. In a pan heated with 1 tbsp of oil, add in pork belly and pan-fry till browned. Set aside.

  3. In the same pan, add in yam cubes and stir-fry till browned. Set aside.

  4. In the same pan, add in 1 tbsp of oil, followed by garlic, shallots, sausage and dried shrimp, stir-fry till fragrant.

  5. Add in mushrooms, rice, pork belly and yam, mix well. Followed by seasoning ingredients.

  6. Transfer mixture to rice cooker and set it to cook.
